Ingredients

  • 2 envelope unflavored gelatin
  • 1 cup water
  • 12 ounce PET® Fat Free Evaporated Milk
  • 8 ounce low-calorie cream cheese
  • 2 cup small curd cottage cheese
  • 1 tablespoon liquid artificial sweetner
  • 1 tablespoon lemon juice
  • 3 tablespoon graham cracker crumbs
  • 1/8 teaspoon salt
  • 1/2 cup sugar

Instructions

  • Sprinkle gelatin over water in saucepan. Heat until gelatin dissolves. Remove from heat.
  • Stir in evaporated skimmed milk. Beat cream cheese till smooth. Add cottage cheese. Beat well.
  • Add milk-gelatin mixture, sweetener, lemon juice, vanilla, and salt. Chill until thick as unbeaten egg whites. Beat until mixture is smooth.
  • Sprinkle 2 tablespoons graham cracker crumbs on bottom of a 9-inch round cake pan. Pour beaten mixture in pan. Sprinkle remaining 1 tablespoon graham cracker crumbs over top.
