2 envelope unflavored gelatin
12 ounce PET® Fat Free Evaporated Milk
8 ounce low-calorie cream cheese
2 cup small curd cottage cheese
1 tablespoon liquid artificial sweetner
3 tablespoon graham cracker crumbs
Sprinkle gelatin over water in saucepan. Heat until gelatin dissolves. Remove from heat.
Stir in evaporated skimmed milk. Beat cream cheese till smooth. Add cottage cheese. Beat well.
Add milk-gelatin mixture, sweetener, lemon juice, vanilla, and salt. Chill until thick as unbeaten egg whites. Beat until mixture is smooth.
Sprinkle 2 tablespoons graham cracker crumbs on bottom of a 9-inch round cake pan. Pour beaten mixture in pan. Sprinkle remaining 1 tablespoon graham cracker crumbs over top.
