Clam Chowder

Clam Chowder

Ingredients

  • 1 1/2 cup diced potatoes
  • 1/4 cup finely chopped celery
  • 2 (6 1/2 oz.) can minced clams
  • 1/2 teaspoon pepper
  • 1 (12 oz.) can PET® Evaporated Milk
  • 1/2 teaspoon salt
  • 3 slices of bacon
  • 1 small onion, finely chopped

Instructions

  • Cook bacon in medium saucepan until crisp. Drain fat, reserving 1 tablespoon.
  • Crumble bacon and return with reserved fat to saucepan. Stir in onions and celery. Cook until tender.
  • Drain liquid from clams into a measuring cup. Add enough water to clam juice to make 1 cup of liquid.
  • Stir liquid into onion mixture. Add potatoes, salt and pepper. Heat to boiling. Cover and simmer 20 minutes or until potatoes are tender.
  • Add clams and evaporated milk. Heat until steaming, but do not boil.
