Creamy Zucchini Soup

  • 4 cup chicken broth
  • 6 medium zucchini, diced
  • 1 (12 oz.) can PET® Evaporated Milk
  • 1 teaspoon onion salt
  • 1/2 teaspoon celery salt
  • 1/2 teaspoon thyme leaves, crushed
  • 1/4 teaspoon black pepper
  • Fresh parsley sprigs


  • COMBINE chicken broth and zucchini in large saucepan. Cover and cook over medium heat for 15 to 20 minutes, or until zucchini is tender. Add evaporated milk, onion salt, celery salt, thyme and pepper. Cool slightly.
  • POUR small quantities into blender container and blend until smooth. Return to saucepan. Heat gently and serve.
